One-Pan Garlic Herb Steak (Print Version)

Sear juicy steak bites in one pan with garlic and fresh herbs. Quick, satisfying gluten-free dinner for summer nights.

# What You'll Need:

→ Steak & Marinade

01 - 1 1/2 pounds sirloin steak, cut into 1-inch cubes
02 - 2 tablespoons olive oil
03 - 1 tablespoon Worcestershire sauce
04 - 1 teaspoon salt
05 - 1/2 teaspoon freshly ground black pepper

→ Aromatics & Herbs

06 - 4 cloves garlic, minced
07 - 2 tablespoons unsalted butter
08 - 2 tablespoons fresh parsley, finely chopped
09 - 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

→ Optional Garnish

10 - Lemon wedges, for serving

# Directions:

01 - In a medium mixing bowl, combine sirloin cubes with olive oil, Worcestershire sauce, salt, and black pepper. Toss thoroughly to coat and allow to marinate at room temperature for a minimum of 10 minutes.
02 - Preheat a large skillet, preferably cast iron, over medium-high heat.
03 - Arrange steak cubes in a single layer in the hot skillet. Cook for 2–3 minutes without stirring, then turn each piece and cook an additional 2 minutes until browned and just cooked through. Work in batches if necessary to prevent overcrowding.
04 - Reduce heat to medium. Move steak cubes to one side of the skillet and add unsalted butter and minced garlic. Stir continuously for about 30 seconds until the garlic is fragrant and butter has melted.
05 - Toss steak bites with the garlic butter mixture, then sprinkle with chopped parsley and thyme. Mix gently to ensure even coating.
06 - Transfer steak bites to a serving platter. Garnish with lemon wedges if desired. Serve immediately.

# Expert Tips:

01 -
  • No need to heat the oven—the whole dish comes together in under half an hour using only a single pan.
  • The juicy steak bites soak up the garlic butter and herbs, making each bite taste like more work went into it than actually did.
02 -
  • Don’t crowd the pan or your steak won’t brown—I learned this after ending up with steamed meat instead of crispy edges.
  • Pushing the steak aside before adding the butter and garlic keeps the garlic from burning and makes everything taste brighter.
03 -
  • Letting the steak come to room temperature before cooking gives you the best texture and even browning.
  • Cast iron pans give the most dramatic sear, but any heavy skillet will do—just heat it properly.
