04 - 1/2 teaspoon vanilla extract

05 - 2 cups plain Greek yogurt
06 - 1 tablespoon honey, optional
07 - Fresh mint leaves for garnish, optional
# Directions:
01 - In a medium saucepan, combine quartered strawberries, granulated sugar, and fresh lemon juice.
02 - Place saucepan over medium heat and stir occasionally until strawberries release their natural juices and soften, approximately 8 to 10 minutes.
03 - Gently mash some of the softened strawberries using a fork or potato masher to achieve a chunky, rustic compote consistency.
04 - Remove from heat and stir in vanilla extract. Allow compote to cool for 5 to 10 minutes.
05 - Distribute plain Greek yogurt evenly among four serving bowls or glasses.
06 - Spoon cooled strawberry compote over the Greek yogurt in each serving vessel.
07 - Drizzle with honey and garnish with fresh mint leaves if desired. Serve immediately.
